Roasted vegetables with smoked salmon

How to save vegetables from rotting in your fridge? You could roast it with smoked salmon and fresh ricotta.

I was walking through the grocery store and thinking what to prepare for a lunch. I remembered that I have a lot of vegetables in my fridge that needs to be cooked. Immediately, I came up with an idea of roasted vegetables, so I started looking around for something that can be added into it. After some time of walking around I decided to take a ricotta and smoked salmon. I was thinking… It could be very tasty when mixed together.

How to prepare

Preparation was made in 2 simple steps.

First step

Ingredients

  • 2 tablespoons olive oil;
  • 2 tablespoons granulated garlic;
  • 2 tablespoons oregano;
  • 1 tablespoon salt;
  • 10g parsley;
  • 10g basil;
  • 2 capsicums;
  • 1 onion;
  • 80g broccoli;
  • 80g cauliflower;
  • 3 baby zucchini;
  • 1 handful of baby spinach;

Preparation

  1. Chop vegetables;
  2. Put ingredients into a mixing bowl and mix them with your hands;
  3. Move everything from the mixing bowl into a roaster;
  4. Owen roast on 200°C for 20 minutes;

Second step

Ingredients

  • 500g of fresh ricotta;
  • 300g of smoked salmon;
  • 2 tablespoons mustard;

Preparation

  1. Chop smoked salmon;
  2. Put ingredients into a mixing bowl and mix them with your hands;
  3. Move everything from the mixing bowl into a roaster and mix it with roasted vegetables;
  4. Owen roast on 200°C for 20 minutes;

Serving size: 4
